Step 39: Add cucumbers. There are so many health benefits from cucumbers that I don’t have enough space to expound on each. They: protect the brain with flavonols called fisetin; reduce the risk of cancer with lignans; fight inflammation with a COX-2 inhibitor; supply numerous anti-oxidants such as vitamin C and kaempferol; freshen your breath; help with stress by providing various B vitamins; aid healthy digestion with fiber; support heart health with potassium; support skin health with silica; and provide water, 90% of the cucumber is water. And these need to be purchased from an Organic source. Conventional cukes have been linked to cancer.
Step 40: Add watermelon, honeydew, cantelope, and other melons. Watermelon has more lycopene per ounce than tomatoes, which is good for your heart. Cantelope is a rich source of vitamin C as well as vitamin A (a full day’s supply). Honeydew is rich in vitamin C as well as copper and potassium. All these melons are very healthy, but should be eaten in smaller amounts if you are diabetic or trying to lose weight.
